Make an impressive and tasty breakfast for yourself and someone special with these flavorful and wholesome quesadillas filled with eggs, salsa and Sargento® Sliced Reduced Fat Medium Cheddar Cheese bringing it all together when melted to perfection. Consider this recipe to be an excellent breakfast-in-bed option for those days you feel like spoiling yourself and someone you love!

  • 2 eggs
  • 2 egg whites
  • 1 green onion, thinly sliced or 1/4 cup chopped chives
  • 1/4 cup salsa
  • 4 slices Sargento® Sliced Reduced Fat Medium Cheddar Cheese, diagonally cut in half
  • 2 (6 to 7-inch) whole wheat tortillas
  1. Beat together eggs, egg whites, green onion and salsa.
  2. Heat a large nonstick skillet over medium heat. Add egg mixture; cook, stirring frequently, until eggs are soft set. Arrange cheese over tortillas. Spoon eggs over cheese; fold tortillas in half over filling.
  3. Cook quesadillas in skillet over medium heat 3 minutes per side or until heated through and cheese is melted. Serve with additional salsa if desired.
