Make this deliciously filling salad next time you want to eat something healthy and wholesome. You’ll be surprised how wonderful rice mixes into a Caesar salad with notes from garlic and savory flavors of rice cooked in chicken broth. Topping this salad with Sargento® Shredded 6 Cheese Italian along with Caesar dressing brings everything together right there on your plate!

  • 1 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 cup uncooked converted white rice
  • 2-1/4 cups low sodium chicken or vegetable broth
  • 2/3 cup Caesar or Italian salad dressing
  • 4 cups sliced romaine lettuce
  • 2 cups (8 oz.) Sargento® Shredded 6 Cheese Italian, divided
  • 1/2 cup garlic croutons
  • Pepper (optional)
  1. Heat oil in medium saucepan over medium heat. Add garlic; cook 1 minute. Stir in rice to coat with oil. Add broth; heat to a boil over high heat. Reduce heat; cover and simmer 20 minutes or until most liquid is absorbed. Let stand 5 minutes.
  2. Cool rice to room temperature in large bowl. Stir in salad dressing, lettuce and 1-1/2 cups cheese. Top with croutons and remaining cheese. Serve with freshly ground pepper, if desired
