Save the heavy pasta sauce for another day and opt for this light and invigorating Italian meal instead. Sargento® Shredded 6 Cheese Italian will really bring all of the flavors in this summery dish together once you’ve topped your plate off with yummy garnishes to your taste buds’ delight.

  • 1 Tbsp. olive oil
  • 1/2 cup finely chopped onion or shallots
  • 3 Tbsp. all-purpose flour
  • 1 can (14 oz.) chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tsp. grated lemon rind
  • 1/4 tsp. pepper
  • 1 lb. orzo pasta, cooked and drained
  • 1/3 cup thinly sliced fresh basil leaves
  • 2 cups (8 oz.) Sargento® Shredded 6 Cheese Italian, divided
  • Diced plum tomato (optional)
  • Basil sprigs (optional)
  1. Cook onion in oil in medium saucepan over medium heat 5 minutes or until softened. Whisk in flour; cook 1 minute more, stirring constantly. Whisk in broth gradually; heat to a boil, stirring frequently. Stir in lemon juice, lemon rind and pepper.
  2. Toss orzo with broth mixture, basil and 1-1/2 cups cheese. Top with tomatoes, remaining cheese and basil sprigs, if desired.
