Make this tasty and refreshing salad as a main meal or side dish. With so many lovely crisp ingredients like sliced celery, onions and tomatoes tossed in a homemade vinaigrette and Sargento® Shredded Monterey Jack Cheese, you definitely can’t go wrong.

  • 2 cups cooked corn (fresh or frozen)
  • 1-1/2 cups (6 oz.) Sargento® Shredded Monterey Jack Cheese or Sargento® Shredded Cheddar Jack Cheese
  • 3/4 cup diagonally sliced celery
  • 10 cherry tomatoes, halved
  • 1/4 cup thinly sliced green onions
  • 3 Tbsp. cider vinegar
  • 1 tsp. sugar
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/4 cup vegetable oil
  • 1 tsp. celery seeds (optional)
  1. Combine corn, cheese, celery, tomatoes and green onions in medium bowl; set aside.
  2. Combine vinegar, sugar, mustard and salt in small bowl. Gradually add oil, whisking until smooth and thickened. Stir in celery seeds, if desired.
  3. Pour dressing over salad; toss gently to coat. Cover and chill several hours or overnight before serving.
