Sandwiches can be meatless and still pack a ton of delicious flavors from ingredients like roasted red peppers, chopped stuffed olives, capers, crispy lettuce and slices of smooth avocado. Top with Sargento® Ultra Thin® Cheddar-Jack Cheese Slices and sandwich rounds slathered in a combination of custom made mayonnaise.

  • 3 Tbsp. finely chopped pitted pimiento stuffed olives
  • 1 Tbsp. chopped fresh parsley or basil (optional)
  • 1 Tbsp. reduced fat mayonnaise
  • 2 tsp. drained capers
  • 2 thin sandwich rounds, split or 4 slices sourdough bread
  • 2 Boston lettuce leaves
  • 2 well-drained roasted red peppers
  • 1/2 ripe avocado, peeled, seeded, thinly sliced
  • 2 slices Sargento® Ultra Thin® Cheddar-Jack Cheese Slices
  1. Combine olives, parsley if desired, mayonnaise and capers; mix well. Spread on split sides of sandwich rounds or over bread.
  2. Fill sandwiches with lettuce, red peppers, avocado and cheese.
