Creamy White Chicken Chili

<p>This flavorful Creamy White Chicken Chili is a quick and easy way to make a rich and delicious chili in 30 minutes. Using tender rotisserie chicken, hearty beans and <span>Sargento® Shredded Sharp Natural Cheddar Cheese</span> is the perfect blend to score big with friends and family!</p>
Ingredients
- 3 Tbsp butter
- 1 medium yellow onion, finely chopped
- 1 Tbsp minced garlic
- 1 Tbsp mild chili powder
- 1 Tbsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chipotle powder
- 1 Tbsp cornstarch
- 8 oz block cream cheese, cubed
- 4 cups chicken stock
- 1 rotisserie chicken removed from skin and carcass and shredded, approximately 3 cups of chicken meat
- 4 oz can diced green chilis
- 15.5oz can cannellini beans, drained
- 1 cup half and half
- 1 tsp salt or to taste
- Sargento® Shredded Sharp Natural Cheddar Cheese
Directions
- Melt 1 Tbsp of butter in a 4 quart or larger pot over medium heat. Add onion and cook, while stirring, about 3 minutes or until onion starts to become fragrant and translucent. Then add the other 2 Tbsp butter, garlic, chili powder, cumin, coriander, chipotle and cornstarch.
- Stir to combine. Slowly add one cup of chicken broth while stirring. Add the cream cheese and continue stirring until cheese melts and combines with other ingredients. Slowly add the rest of the broth while stirring.
- Add chicken, green chilis, beans, salt and half and half. Gently stir to combine. Heat through.
- Serve topped with Sargento® Shredded Sharp Natural Cheddar Cheese. Enjoy!

I added a can of hominy and a can of fire roasted corn. Delicious! Next time I think I'm going to add more vegetables like celery, bell peppers, carrots and parsnips.

I was wanting white chicken chili and came across this recipe and decided to make it, I did make changes and added half of a diced jalapeño an extra can of beans some cream corn an extra tablespoon of corn starch some hot sauce and added the cheese to the soup. It is very good!

We made this for a chili feed football game! My husband put the chicken breast in the smoker for extra flavor! We used Great Northern and Cannallini beans (put half of them in the food processor to make it thicker. A can of refried beans too! It was loved by all and we were asked for the recipe! It was our first time ever making White Chicken Chili. Thank You so much for the Recipe!

Love that it was easy to cut recipe in half for the 2 of us. Used whole can of beans but may use more next time. Instead of adding the corn starch with spices I added it and a bit more to the half and half to thicken it more. So tasty!

Fabulous recipe...I was in the mood for homemade chicken noodle soup and realized I forgot the egg noodles so i went searching for a nee recipe to try. I had everything on hand except the cannellini beans so we subbed in some green beans and added some mini shells for a delicious thick chicken goulash.

Added plain white meat and an extra can of great northern beans. Forgot the coriander when shopping so did without. Used slightly less of chili powders but added red pepper flakes. Flavor was perfect as I don't like a overly spicy chili!!!
