These healthy and wonderfully tender sweet potatoes are decorated with a heaping dose of buttery cauliflower and broccoli that are joined with creamy and smooth sour cream and Sargento® Shredded Extra Sharp Cheddar Cheese. This recipe’s tangy and rich cheesy flavor is simply irresistible.

Ingredients
  • 2 large sweet potatoes (about 1-1/2-lb. total), scrubbed
  • 2 tsp. butter or olive oil
  • 1/2 cup chopped sweet onion
  • 1 cup each: small broccoli and cauliflower florets
  • 1/2 cup sour cream
  • 1/2 cup (2 oz.) Sargento® Shredded Extra Sharp Cheddar Cheese, divided
Directions
  1. Bake potatoes in a preheated 400° F oven 50 to 55 minutes or until fork tender.
  2. Meanwhile, melt butter in a large skillet over medium heat. Add onion; sauté 4 minutes. Add broccoli and cauliflower; sauté 1 minute. Reduce heat to low; add 1 tablespoon water to skillet. Cover; cook 6 minutes or until vegetables are crisp-tender. Remove from heat; stir in sour cream and 1/4 cup cheese.
  3. Split potatoes; season with salt and pepper to taste. Spoon vegetable mixture into potatoes; top with remaining cheese.
