Salad just got an upgrade with these crunchy frico cheese disks. Looking for a simple way to make your salads gourmet? These cheese disks can also be formed into just about any shape by forming them right out of the oven. It also works with parmesan, swiss or 4 state cheddar or colby jack Sargento® cheeses.

  • 1 cup Sargento® Shredded Sharp Cheddar Cheese - Fine Cut
  • 4 cups baby greens, washed
  • ½ cup fresh anise (fennel), thinly sliced
  • 1 tbsp. fresh herbs (dill, chives, parsley), chopped
  • ½ cup grape tomatoes, halved
  • 1 ea. baby cucumber, thinly sliced
  • 2 tbsp. balsamic vinaigrette, prepared
  1. Preheat oven to 400 degrees F. Line 2 baking sheet with non-stick foil or a silicone mat. Spread cheese into 4 equal 1/4 cup piles, spreading cheese into flat circles about 6” in diameter. Bake cheese circles for 10-15 minutes or until lightly browned. Remove from oven and let cool completely. Transfer cheese disks to a plate lined with paper towels. Pat cheese disks with paper towel to remove excess grease. Set aside.
  2. For salad mix, combine baby greens, anise and fresh herbs in a large bowl. Drizzle with dressing and toss to coat. Place cheese disks on dinner plates and top with dressed greens. Top with tomatoes, and cucumber slices. Serve.
