Mango & Avocado Quesadillas

These quesadillas are bursting with flavors from ripe and juicy mango, creamy avocado slices and Sargento® Colby-Jack Slices. Complete by adding your favorite chipotle or jalapeño salsa and put everything inside a flour or corn tortilla and baked until the cheese is melting out of its sides.

  • 8 (6-inch) flour or corn tortillas
  • 1 Tbsp. canola or vegetable oil
  • 8 slices Sargento® Colby-Jack
  • 1 small ripe mango or papaya, peeled, seeded, thinly sliced
  • 1 ripe avocado, peeled, seeded, sliced
  • 1/4 cup chopped cilantro
  • 3/4 tsp. ground cumin or chili powder
  • 1/2 cup chipotle or jalapeno salsa
  1. Brush 1 side of tortillas lightly with oil; place 4 tortillas, oiled sides down, on large baking sheet. Top with 4 slices cheese.
  2. Layer mango, avocado and cilantro over tortillas; top with remaining slices of cheese. Place remaining 4 tortillas, oiled sides up, on top; sprinkle with cumin.
  3. Bake in preheated 450°F oven 6 to 7 minutes or until golden brown and cheese is melted. Cut each quesadilla into quarters; serve with salsa.
