Lentil and Caramelized Onion Tacos

These tasty tacos are full of savory ingredients like lentils simmered with salsa, onions and garlic along with Sargento® Shredded 4 Cheese Mexican - Traditional Cut. Each tortilla is packed with our hearty blend and then garnished with shredded lettuce, tomato and sliced avocado for a refreshing twist.

  • 1/2 cup brown or green lentils
  • 2 tsp. vegetable oil
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tsp. ground cumin
  • 1/2 cup salsa, preferably hot or medium
  • 2 cups (8 oz.) Sargento® Shredded 4 Cheese Mexican - Traditional Cut, divided
  • 8 corn tortillas, warmed according to package directions*
  • 1 cup shredded romaine lettuce
  • 1 cup chopped fresh tomatoes
  • 1 ripe avocado, peeled, seeded and diced (optional)
  1. Cook lentils according to package directions.
  2. Meanwhile, heat oil in a large skillet over medium heat. Add onion; saute 6 to 8 minutes or until lightly browned. Add garlic and cumin; continue to saute 2 minutes. Drain lentils; add to skillet. Stir in salsa; simmer 5 minutes. Remove from heat; stir in 1 cup cheese.
  3. Spoon lentil mixture into warm tortillas; top with lettuce, tomatoes, if desired, avocado and remaining 1 cup cheese.
