Not every salad has to be green, especially when you’re using tasty superfoods like quinoa and mixing in pieces of ripe pear, chopped walnuts and tangy pomegranate seeds. Toss together with Sargento® Shredded Reduced Fat Mild Cheddar Cheese and a splash of citrus as a springy dressing.

  • 2 cups water
  • 1 cup quinoa (about 6 ounces)
  • 3 Tbsp. canola oil
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1 large ripe pear, unpeeled, cut into 1/2-inch pieces
  • 1/2 cup coarsely chopped walnuts, toasted
  • 1/2 cup pomegranate seeds (optional)
  • 3/4 cup (3 oz.) Sargento® Shredded Reduced Fat Mild Cheddar Cheese*
  1. Combine water and quinoa in medium saucepan; bring to a boil over high heat. Reduce heat; cover and simmer until quinoa is tender and translucent, 12 to 14 minutes. Drain in a fine mesh strainer; rinse with cold water, drain well. Transfer to a large bowl.
  2. Stir in oil, lemon juice and salt; mix well. Stir in pear, walnuts and, if desired, pomegranate seeds; mix well. Stir in cheese. Serve immediately or chill for up to 30 minutes before serving.
