8 slices Sargento® Reserve Series™ Aged White Cheddar Cheese
Combine brats, beer and onions in a dutch oven or large saucepan. Bring liquid to a simmer, then cook on low for 25-30 minutes. Transfer brats to a plate and let cool for 15 minutes while making sauce.
For sauce: Drain onions and transfer onions to a small skillet or saucepan. Add barbecue sauce and balsamic vinegar. Cook over medium heat, stirring occasionally, until sauce thickens. Stir in bacon. Remove from heat and let cool until ready to assemble sandwiches.
Cut cooled brats lengthwise ¾ through. Grill split brats over medium heat for 5 minutes, flipping brats after 2 minutes. Keep warm.
Place 1 slice of cheese on each bun bottom. Place 5-6 slices of apple over cheese. Place 1 grilled, split brat over apple. Top each with 1 slice of cheese, then spoon onion and bacon mixture on top of cheese. Finish with bun top and serve.
