Whip up an omelet with flavors from sautéed chopped onions, green bell peppers and salsa with fluffy eggs wrapped up in warmed tortillas with a melted layer of Sargento® Ultra Thin® Pepper Jack Cheese Slices and chopped fresh cilantro. Make this for any meal of the day and enjoy the savory and light flavors of this Spanish-inspired meal.

  • 1 Tbsp. butter or oil
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 4 large eggs
  • 2 large egg whites
  • 1/4 cup salsa
  • 6 slices Sargento® Ultra Thin® Pepper Jack Cheese Slices
  • 2 (8-in.) flour tortillas, warmed according to package directions
  • 2 Tbsp. chopped cilantro (optional)
  1. Melt butter in a large nonstick skillet over medium heat. Add bell pepper and onion; sauté 5 minutes.
  2. Beat together eggs, egg whites and salsa; add to skillet. Cook, stirring occasionally, until eggs are soft set.
  3. Place cheese evenly over warmed tortillas; top with egg mixture, and, if desired, cilantro. Roll up.
