This recipe brings together a great combination of Mexican-inspired ingredients like seasoned ground beef cooked with chopped bell peppers, onions and garlic as well as salsa and sweet notes from cocoa and cinnamon. Once you’ve topped the cornbread layer of this dish with the savory meat mixture, just sprinkled Sargento® Shredded Sharp Cheddar Cheese - Traditional Cut on top for a delicious melted finish.

Ingredients
  • 1 pound lean ground beef or turkey
  • 1 red or green bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (8 oz.) tomato sauce
  • 1/2 cup salsa
  • 1-1/2 tsp. unsweetened cocoa
  • 1/4 tsp. ground cinnamon
  • 1 package (8 oz.) cornbread mix
  • 1-3/4 cups (7 oz.) Sargento® Shredded Sharp Cheddar Cheese - Traditional Cut, divided
Directions
  1. Cook meat, bell pepper, onion and garlic in a large deep skillet over medium heat, stirring frequently, until meat is no longer pink, about 8 minutes. Stir in tomato sauce, salsa, cocoa and cinnamon; simmer 10 minutes.
  2. Prepare cornbread mix according to package directions. Spoon meat mixture into an 8 or 9-inch square baking dish. Sprinkle 1-1/4 cups cheese over meat mixture. Spoon cornbread batter over cheese, spreading evenly to edges of dish.
  3. Bake in a preheated 375°F oven 20 to 25 minutes or until bubbly and cornbread is golden brown. Top with remaining cheese. Continue baking 2 to 3 minutes or until cheese is melted.
