<p>Smokey Sargento® String Cheese coins are tossed together with cooked penne pasta, grape tomatoes, and fresh arugula pesto.</p>

Ingredients
  • 1 cups Arugula
  • 1/4 cup Chopped walnuts
  • 1/3 cup Olive oil
  • 1/4 cup Sargento® Shredded Parmesan
  • 1 Tbsp. White balsamic vinegar
  • 1 clove Garlic, peeled
  • 1/2 tsp. Kosher salt
  • 8 sticks Sargento® Smokehouse String Cheese™, cut into ½” coins
  • 2 cups Penne pasta, cooked and rinsed
  • 1 cup grape tomatoes, halved
Directions
  1. In a personal blender or food processor, combine arugula and next 6 ingredients. Blend until thick and smooth.  Transfer to a large salad bowl.
  2. Add remaining ingredients and toss until pasta is well coated with pesto. Top with more string cheese coins if desired. Serve.
