<p>Smokey Sargento® String Cheese coins are tossed together with cooked penne pasta, grape tomatoes, and fresh arugula pesto.</p>
Ingredients
- 1 cups Arugula
- 1/4 cup Chopped walnuts
- 1/3 cup Olive oil
- 1 Tbsp. White balsamic vinegar
- 1 clove Garlic, peeled
- 1/2 tsp. Kosher salt
- 8 sticks Sargento® Smokehouse String Cheese™, cut into ½” coins
- 2 cups Penne pasta, cooked and rinsed
- 1 cup grape tomatoes, halved
Directions
- In a personal blender or food processor, combine arugula and next 6 ingredients. Blend until thick and smooth. Transfer to a large salad bowl.
- Add remaining ingredients and toss until pasta is well coated with pesto. Top with more string cheese coins if desired. Serve.
