Directions
  1. Pre-heat oven to 350 degrees. Grease 2 13” X 9” baking dishes with non-stick spray.
  2. In a large bowl, combine cooked ground beef, beans, salsa, corn and half of Sargento® Shreds with Cholula® Seasoning. Set aside. 
  3. Divided salsa verde among both pans.
  4. To assemble enchiladas, dip one tortilla into the salsa verde, coating both sides. Spoon ½ cup of the meat mixture across the center of tortilla. Fold both sides in towards center. Place enchilada to one end of one pan and repeat process with remaining tortillas, salsa verde and filling, placing 6 filled enchiladas in each baking dish. Spoon any remaining salsa verde over tortillas.
  5. Sprinkle remaining cheese down the center of enchiladas.
  6. Cover with foil and bake for 20 minutes. Uncover and bake an additional 15 minutes.
  7. Remove from oven and let cool for 10 minutes before serving.
