<p>The jibarito is a popular sandwich with roots in Chicago, inspired by Puerto Rican cuisine. It’s made with fried green plantains as a substitute for bread and paired with classic sandwich fillings. Add a slice of Sargento® Reserve Series<span>™</span> Sliced Aged White Cheddar natural Cheese and take the flavor up several notches. This sandwich makes an excellent lunch or dinner, and is easy to adapt and add whatever sandwich fixings you like.</p>
- 2 Plantains, green
- 2 cups canola oil
- ¼ cup mayo ketchup blend
- 9 oz deli meat of choice (chicken, turkey, roast beef, etc.)
- 4 slices of Sargento® Reserve Series™ Sliced Aged White Natural Cheddar Cheese
- 1 white onion, cut into rounds
- 1 tomato, cut into rounds
- 4 leaves of lettuce, cut in half
- Peel the plantains before cutting them in half and then into quarters. Heat your oil and fry plantains for 2-3 minutes, or until golden brown all around. Transfer to a paper towel lined plate.
- Cool the plantains before flattening with a tostonera or between two cutting boards. Fry again in the same oil for another 2-3 minutes, or until golden brown. Transfer to a paper towel lined plate to cool.
- Build the jibaritos starting with one fried plantain, topped with the mayo ketchup blend. Top with a slice or two of the deli meat, a slice of cheese, a few slices of onion, tomato, and lettuce before topping with more mayo ketchup blend and the final slice of plantain.
