Breakfast Avocado Boats with Shredded 4 State Cheddar® Cheese

Avocado halves are filled with scrambled eggs, Canadian bacon and topped with Sargento® Shredded 4 State Cheddar® Cheese. Garnished with chopped chives.

  • 2 large ripe avocados
  • 3 large eggs
  • 2 slices Canadian bacon, diced
  • 1/4 cup Sargento® Shredded 4 State Cheddar® Cheese
  • Kosher salt and fresh ground black pepper to taste
  • 1 tbsp chives, chopped
  1. In a microwave-safe bowl, beat eggs then add diced Canadian bacon and Sargento® Shredded 4-State Cheddar® Cheese. Mix thoroughly.
  2. Microwave egg mixture approximately 2 minutes or until eggs are cooked and cheese is melted. Season to taste.
  3. Cut avocados in half and carefully remove pits. You may want to scoop out a bit of avocado to make room for the scrambled eggs.
  4. With a spoon, fill avocado halves with scrambled egg mixture and top with chopped chives. Plate and serve.
