Once winter packs up and heads out for the year and asparagus season rolls around, the most iconic spring dish comes to mind. Eggs, bacon and asparagus are some of the most complementary ingredients that have ever been inspired by traditional cuisine. Now, take all of these herbs, spices and savory ingredients and add Sargento® Shredded Swiss Cheese and you’ve got yourself something really special.

  • 5 slices bacon, cut into thin strips
  • 1/2 cup chopped onion
  • 1-1/2 cups fresh asparagus, cut into 1/2-inch pieces
  • 4 eggs
  • 1-1/2 cups half-and-half or whole milk
  • 1-1/4 cups (5 oz.) Sargento® Shredded Swiss Cheese
  • 1-1/4 cups (5 oz.) Sargento® Shredded Mozzarella - Fine Cut
  • 1 tsp. dried parsley
  • 1/4 tsp. ground white pepper
  • 1/8 tsp. ground nutmeg
  • 1 (9-inch) prepared deep dish pie crust, unbaked
  1. Cook bacon and onion in large skillet until bacon is almost crisp. Add asparagus; cook 5 minutes or until tender, stirring occasionally. Pour off drippings; set aside.
  2. Beat eggs lightly in large bowl. Add half-and-half, cheeses, parsley, pepper, nutmeg and asparagus mixture; mix well. Pour into pie shell; place on baking sheet.
  3. Bake in preheated 350°F oven 50 minutes or until golden brown and center is set.
