The perfect combination of flavors is achieved in this simple yet delicious melt made with sliced rotisserie roasted chicken breasts peppered with barbecue seasoning. It’s layered with Sargento® Sliced Colby-Jack Cheese between two slices of hearty multigrain bread that’s slathered with coarse-grained mustard and toasted on a skillet until the cheese bubbles out the sides.

  • 4 tsp. butter, softened
  • 4 slices multi-grain or whole wheat bread
  • 8 slices Sargento® Sliced Colby-Jack Cheese
  • 4 slices rotisserie roast chicken breast or leftover cooked chicken (4 to 5 oz.)
  • 1/2 tsp. barbecue seasoning
  • 1 Tbsp. coarse-grained mustard
  1. Spread butter over one side of each slice of bread. Turn bread over onto a sheet of waxed paper or work surface. Arrange 2 slices of cheese over each slice of bread. Arrange chicken breast over 2 of the bread slices. Sprinkle seasonings over chicken. Spread mustard over chicken. Close sandwiches.
  2. Heat a large nonstick skillet or griddle over medium heat until hot. Add sandwiches; cook 3 minutes per side or until golden brown and cheese is melted. Cut diagonally in half.
