Pepper Jack Huevos and Refried Beans

Whether it’s morning, noon or night, this hearty dish is always an amazing treat with savory refried black beans, smoky thick cut bacon, fried eggs and a layer of melted Sargento® Shredded Pepper Jack Cheese on corn tortillas for authentic Mexican flavor.

  • 2 thick slices bacon, preferably applewood smoked
  • 4 eggs
  • 3/4 cup (3 oz.) Sargento® Shredded Pepper Jack Cheese, divided
  • 1 cup canned refried black beans, heated
  • 4 corn tortillas, warmed
  1. Cook bacon in a large nonstick skillet over medium heat until crisp. Transfer to a paper towel; set aside. Pour off all but 2 teaspoons of the bacon drippings from skillet.
  2. Fry eggs in drippings over-easy or sunny-side-up as desired. Stir 1/2 cup cheese into warm refried beans. Spread mixture in center of two serving plates. Top with eggs and remaining 1/4 cup cheese.
  3. Serve with bacon, crumbled if desired, and warm tortillas.
