Make these lamb loin chops and wow the dinner crowd with a Sargento® Shredded Parmesan Cheese-encrusted exterior made with a handcrafted breading of breadcrumbs, lemon peel and oregano. These chops go great with any side dish you wish and make an impressive and tasty meal.

Ingredients
  • 1-1/4 cups (5 oz.) Sargento® Shredded Parmesan Cheese
  • 1 cup breadcrumbs
  • 3 Tbsp. chopped fresh oregano
  • 1 lemon, grate yellow part of peel and squeeze juice
  • 2 eggs
  • 1/4 cup all-purpose flour
  • Salt & pepper to taste
  • 8 bone-in lamb loin chops (about 1-inch thick) or pork chops
  • 2 Tbsp. butter
  • 4 Tbsp. olive oil, divided
Directions
  1. Preheat oven to 425°F.
  2. Mix cheese, breadcrumbs, oregano and lemon peel in a shallow dish.
  3. Whisk eggs together in a shallow bowl and set aside. Place flour on a plate and season generously with salt and pepper.
  4. Coat chops on both sides with flour and shake off excess. Dip chops into eggs, then coat on both sides with cheese-breadcrumb mixture.
  5. Melt butter with 2 tablespoons olive oil in skillet. Add chops to skillet and cook until golden brown, about 3 minutes per side. Transfer to baking dish that has been greased with remaining olive oil. Sprinkle chops with lemon juice.
  6. Bake until chops are crispy on outside and meat thermometer registers at 150°F, approximately 20 minutes.
