Ingredients
  • 2 15 oz. cans black beans, drained and rinsed
  • ½ cup red bell pepper, chopped
  • 3 green onions, chopped
  • ½ cup breadcrumbs
  • ¼ cup chopped walnuts
  • 2 tsp. McCormick® Grill Mates® Chipotle & Roasted Garlic Seasoning
  • 2 Tbsp. avocado or vegetable oil
  • 8 slices Sargento® Sliced Pepper Jack Natural Cheese
  • ½ cup mayonnaise
  • 1 Tbsp. French’s® Dijon Mustard with Chardonnay
  • 2 tsp. lime zest
  • 4 split whole wheat hamburger buns
  • 2 leaves leaf lettuce, split in half, washed
  • 8 slices tomato
  • 3 slices red onion, optional
  • 1 med. avocado, seed and skin removed, thinly sliced
Directions
  1. For Veggie Burgers: Set aside 1 cup of black beans. Combine remaining black beans(about 1 ½ cups) and next five ingredients in a food processor. Cover and process until smooth. Transfer mixture to a bowl. Add reserved cup of black beans and stir until well blended. Form into four equal patties(about 6 oz. each). Set aside.
  2. For Mustard Lime Mayo: In a small bowl, combine mayo, Dijon mustard and lime zest. Stir until well blended. Set aside.
  3. Prepare buns by evenly spreading mustard lime mayo on the cut side of each bun top. Place one piece of lettuce and 2 tomato slices on the bun bottoms. Set aside.
  4. Pre-heat a large non-stick skillet over medium heat. Add avocado oil. Place 2 veggie burgers in the skillet. Cook for 2-3 minutes or until golden brown and crisp on the bottom. Gently flip burgers. Cook for 1-2 minutes. Add 2 slices of cheese to each burger. Cook an additional minute or until cheese begins to melt. Transfer to a plate. Keep warm while cooking remaining burgers.
  5. Transfer veggie burgers to bun bottoms over lettuce and tomato. Top with red onion rings, avocado slices and bun tops. Serve
