This vegetarian dish makes for a tasty meal or side, mixing the earthy flavors of bulgur with tomatoes, radishes and raisins as well as freshly chopped herbs like parsley and mint. A topping of Sargento® Shredded Mild Cheddar Cheese - Fine Cut adds a rich cheesy flavor to this salad, along with a splash of citrus for authentic tasting flavor.

  • 1/2 cup bulgur
  • 3/4 cup boiling water
  • 2 large plum tomatoes, seeded and chopped
  • 4 large red radishes, shredded
  • 1/2 cup chopped fresh parsley
  • 1/4 cup golden raisins
  • 3 to 4 Tbsp. finely chopped fresh mint leaves, as desired
  • 1/4 cup light olive oil
  • 1/4 cup fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • 1-1/2 cups (6 oz.) Sargento® Shredded Mild Cheddar Cheese - Fine Cut
  • 1/4 cup chopped peanuts
  1. In medium bowl, soak bulgur in boiling water 30 minutes. Add tomatoes, radishes, parsley, raisins and mint; toss. Combine oil, lemon juice, garlic, curry powder, cumin and cinnamon; mix well. Add to bulgur; toss well. Cover and refrigerate at least 30 minutes. Just before serving, stir in cheese; sprinkle with peanuts.
