This side dish is super easy to make and super tasty! Something wonderful happens when you combine cornmeal, creamed corn and freshly chopped chives, diced green chilies — and some Sargento® Shredded Double Cheddar Cheese that melts and adds a rich cheesy flavor.

  • 2 eggs, beaten
  • 2 cans (14 oz. each) creamed corn
  • 1 can (4 oz.) diced green chilies
  • 1/2 cup finely chopped fresh chives
  • 3/4 cup cornmeal
  • 2 cups (8 oz.) Sargento® Shredded Double Cheddar Cheese, divided
  • 1/4 tsp. salt
  • 2 tsp. butter, softened
  1. Preheat oven to 350°F.
  2. In a bowl, stir together eggs, corn, chilies, chives and cornmeal. Fold in 1-3/4 cups cheese and salt. Grease 12-inch baking dish with butter and pour corn and cheese mixture into it.
  3. Bake 45-50 minutes until golden brown. Remove from oven; top with remaining cheese. Let stand 10 minutes before serving.
