This salad is perfect for any meal and is filled with delicious flavors from roasted red peppers, wholesome orzo pasta tossed with pistachios and a handmade vinaigrette of Dijon mustard, oil and white wine vinegar. Best of all, it’s topped with a hearty helping of Sargento® Shredded Reduced Fat Sharp Cheddar Cheese.

  • 3/4 cup (4 oz.) orzo pasta
  • 2-1/2 Tbsp. olive oil
  • 1-1/2 Tbsp. white wine vinegar or sherry vinegar
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (5 to 6 oz.) pkg. mixed baby greens
  • 1-1/2 cups (6 oz.) Sargento® Shredded Reduced Fat Sharp Cheddar Cheese
  • 1/2 cup well-drained bottled roasted red peppers, cut into short, thin strips
  • 1/2 cup shelled unsalted pistachio nuts
  1. Cook pasta according to package directions.
  2. Meanwhile, whisk together oil, vinegar, mustard, salt and pepper in medium bowl. Transfer 1 tablespoon of dressing to very large bowl. Drain orzo; add to medium bowl and toss well. Let stand 15 minutes or chill 8 minutes.
  3. Add greens to large bowl with dressing; toss well. Add cheese and red pepper strips; toss again. Add orzo and nuts; toss well and transfer to serving plates. Serve with additional pepper, if desired.
