East Coast Clambake Salad

The taste of an East coast clambake served up in an enticingly light salad. Not only is the tang of Sargento® Sharp Cheddar Cheese the perfect match for a true New England classic, but a must-have when you want to taste the flavor of New England.

  • 1 large potato, peeled, cooked, cooled and cubed
  • 1 small onion, peeled and minced
  • 1 tomato, chopped
  • 1/2 cup whole kernel corn
  • 1/3 cup Sargento® Fine Cut Shredded Sharp Cheddar Cheese
  • 1(6.5-ounce)can chopped clams, drained
  • 2 slices bacon, cooked and crumbled
  • 1 teaspoon cracked black pepper
  • 1/4 teaspoon salt
  • 1/2 cup mayonnaise or salad dressing
  • 2 tablespoons pure olive oil
  1. In a large bowl, toss the first 9 ingredients together well.
  2. In a separate bowl, whisk the remaining 2 ingredients until smooth and creamy.
  3. Add dressing to salad and gently mix until dressing is evenly distributed.
  4. Cover and refrigerate for an hour before serving.

This was the best unique salad my wife and me have every had. We will be making this during the holidays as well as next summer.
