Our tasty classic cheddar corn recipe is definitely what you could call “comfort food.” When you’re hungry, there’s nothing better than a steamy bowl of thick and hearty stew made from buttery corn and creamy Sargento® Shredded Mild Cheddar Cheese - Traditional Cut with freshly chopped parsley sprinkled on top.

  • 2 Tbsp. butter or margarine
  • 2 Tbsp. minced onions
  • 1 Tbsp. all-purpose flour
  • 1 pkg. (16 oz.) frozen whole kernel corn, thawed
  • 3/4 cup lowfat milk
  • 1/4 cup finely chopped red bell pepper (optional)
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/8 tsp. white pepper
  • 1-1/2 cups (6 oz.) Sargento® Shredded Mild Cheddar Cheese - Traditional Cut
  • 2 Tbsp. chopped fresh parsley
  1. Melt butter in medium saucepan over medium heat. Add onion; cook 3 minutes, stirring occasionally. Stir in flour; cook 1 minute, stirring frequently.
  2. Add corn, milk, salt, white pepper and bell pepper, if desired,heat to a boil over high heat. Reduce heat to medium-low; cook 5 minutes or until bubbly, stirring occasionally. Stir in cheese just until melted. Garnish with parsley.
