The natural peppery flavor of arugula is anything but bland and is an upgrade for any salad. With the added sweetness of pitted dates, nutty flavor of toasted walnuts and a custom made sherry vinaigrette, all that’s needed to make it complete is a helping of Sargento® Shredded Reduced Fat Sharp Cheddar Cheese to add just the right amount of zest. Make this salad as a lunch meal for work or at home.

  • 2 Tbsp. olive oil
  • 1-1/2 Tbsp. sherry vinegar or white wine vinegar
  • 1 Tbsp. finely chopped shallot or sweet onion
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1 (5 to 6 oz.) package baby arugula or mixed baby greens
  • 1-1/2 cups (6 oz.) Sargento® Shredded Reduced Fat Sharp Cheddar Cheese
  • 3/4 cup chopped pitted dates
  • 1/2 cup coarsely chopped walnuts, toasted
  1. Whisk together oil, vinegar, shallot, mustard and salt in a very large bowl.
  2. Add arugula; toss well. Add cheese, dates and walnuts; toss well and transfer to serving plates. Serve with freshly ground black pepper if desired.
