Put panini together that pack a ton of flavors from fresh ingredients like chopped tomato, spinach and onion layered with slices of sopressata and Sargento® Sliced Sharp Cheddar Cheese and drizzled with handmade vinaigrette between two slices of ciabatta rolls.

  • 1/4 cup rice vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 cup olive oil
  • 2 ciabatta rolls, split
  • 1 Tbsp. olive oil
  • 2 Tbsp. mayonnaise
  • ½ cup baby spinach
  • 4 thin slices tomato
  • 4 thin slices red onion
  • 2 oz. sopressata or hard salami, thinly sliced
  • 2 slices Sargento® Sliced Sharp Cheddar Cheese
  1. Preheat panini grill to high.
  2. Prepare vinaigrette: In a blender or food processor fitted with a metal blade, combine vinegar, salt and pepper. With the motor running, through the hole in the top of the feed tube, gradually add in oil in a slow, steady stream; process until combined.
  3. Brush one cut side of each roll with oil. Place on a work surface, oiled side down, and spread with mayonnaise. Layer spinach, tomato, onion, sopressata, cheese and spinach. Drizzle each sandwich with 1 tablespoon vinaigrette. Cover with roll tops and press gently.
  4. Place sandwiches in grill; close the top plate and cook until golden brown, 3 to 4 minutes. Serve immediately.
