Our meatless burrito recipe is packed with so much taste that you’ll forget all about the meat we’ve left out. This recipe calls for seasoning black beans with chili powder and salsa to create a hearty filling that will be joined with Sargento® Shredded Mild Cheddar Cheese - Fine Cut. This simple but great tasting recipe is a wonderful meal idea for Meatless Mondays!

  • 1 Tbsp. vegetable oil
  • 1/2 cup sliced green onions
  • 1 clove garlic, minced
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 jar (12 oz.) salsa, divided
  • 1-1/2 tsp. chili powder
  • 2 cups (8 oz.) Sargento® Shredded Mild Cheddar Cheese - Fine Cut, divided
  • 8 (7-inch) flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  1. Heat oil in large skillet over medium heat; add onions and garlic, cook 2 minutes. Stir in beans, 1/4 cup salsa and chili powder; cook 3 minutes; remove from heat. Stir in 1-1/2 cups cheese.
  2. Spread 1/3 cup bean mixture down center of each tortilla. Roll up; place seam-side down in greased 11x7-inch baking dish. Spoon remaining salsa evenly over tortillas; sprinkle with remaining cheese. Bake in preheated 400°F oven 15 minutes or until hot. Garnish with sour cream, olives and cilantro.
