A handcrafted pineapple, mayonnaise and cocktail sauce dressing has a tropical flavor and goes perfectly with tender cooked shrimp tossed in al dente angel hair pasta. The tasty ensemble also includes paprika seasoning, black olives and Sargento® Shredded Reduced Fat Mozzarella Cheese on top.

  • 12 oz. cooked medium shrimp, peeled and deveined or 2 cups diced cooked chicken
  • 6 oz. angel hair pasta, cooked and drained
  • 3/4 cup sliced pitted black olives
  • 1/2 cup finely chopped red onion
  • 1/2 cup fat-free or light mayonnaise
  • 1/2 cup pineapple juice
  • 1/4 cup bottled seafood cocktail sauce
  • 2 cups (8 oz.) Sargento® Shredded Reduced Fat Mozzarella Cheese
  • 1/4 tsp. paprika
  1. Combine shrimp, pasta, olives and onion in large bowl.
  2. Combine mayonnaise, pineapple juice and cocktail sauce in a small bowl. Pour 3/4 cup dressing over shrimp mixture; toss to coat. Add cheese; toss well. Sprinkle with paprika; pass remaining dressing.
