Sun-dried tomatoes have a way of making every meal taste more rustic, especially when combined with wilted spinach and Italian seasonings. Each halved chicken breast in this dish is topped with this colorful and savory medley of flavors — and melted Sargento® Shredded Mozzarella - Fine Cut.

  • 1-1/2 cups (6 oz.) Sargento® Shredded Mozzarella - Fine Cut
  • 2 Tbsp. minced sun-dried tomatoes
  • 1-1/2 tsp. dried basil
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 4 boneless, skinless chicken breast halves
  • 1/4 cup reduced fat or regular Italian salad dressing or balsamic salad dressing
  • 1 pkg. (10 oz.) spinach leaves, tough stems discarded
  • 1 large tomato, chopped
  1. Mix cheese, sun-dried tomatoes and basil; set aside. Sprinkle salt and pepper over chicken. Heat dressing in a large deep skillet over medium heat. Add chicken; cook 5 minutes per side or until no longer pink in center. Transfer chicken to a plate, leaving juices in skillet; set chicken aside.
  2. Add half of spinach to skillet; turn with tongs until spinach starts to wilt. Add remaining spinach to skillet; continue turning with tongs until spinach is slightly wilted. Sprinkle 1 cup cheese mixture over spinach; top with chicken, tomato and remaining cheese mixture. Cover skillet; simmer 3 to 4 minutes or until cheese is melted. Transfer to serving plates.
