Gouda & Butternut Squash Grilled Cheese

The flavors of fall come alive with this Italian inspired grilled cheese. A creamy butternut squash, mayo, butter and maple syrup mixture surrounded by fresh sage leaves and lots of Sargento® Reserve Series™ Aged Gouda between grilled whole grain bread. Now that’s comfort food.

  • 8 slices Rustic whole grain bread
  • 4 Tbsp. Butter, softened, divided
  • 1 cup Cooked butternut squash, mashed
  • 2 Tbsp. Maple syrup
  • 1 Tbsp. Mayonnaise
  • ½ tsp. Salt
  • 24-32 whole Fresh sage leaves
  • 12 Slices Sargento® Reserve Series™ Aged Gouda
  1. Butter 1 side of each slice of bread, reserving one tablespoon of the butter for the squash. Set bread aside.
  2. In a medium bowl, combine remaining butter, squash, syrup, mayonnaise and salt. Stir with a fork, mashing as you stir, until mixture is creamy. Set aside.
  3. To Assemble: Place 2 slices of cheese each on 4 slices of bread, buttered side down. Spread about ¼ cup of squash mixture on each sandwich over cheese. Place 5-6 sage leaves over squash. Top each sandwich with 1 slice of cheese and bread, buttered side up.
  4. Pre-heat a large skillet or griddle over medium heat. Place 2 sandwiches on griddle and grill for about 2-3 minutes or until golden brown. Flip sandwiches with a spatula. Grill an additional 2-3 minutes or until golden brown. Transfer sandwiches to plates. Repeat with remaining sandwiches. Cut in half and serve.
