Pineapple Crostini with Cheddar

Serve these tasty treats at your next get-together. Top these tiny toasts with a savory and sweet combination of Sargento® Shredded Reduced Fat Sharp Cheddar Cheese mixed with pineapple, balsamic vinegar and pepper flakes garnished with fresh basil.

  • 2 cups fresh pineapple, peeled and finely chopped
  • 1 medium onion, cut into thin wedges
  • 2 Tbsp. balsamic vinegar
  • 1/4 to 1/2 tsp. dried red pepper flakes
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 Tbsp. olive oil
  • 24 (1/2-inch thick) slices diagonally cut whole wheat baguette, toasted lightly
  • 1-1/2 cups (6 oz.) Sargento® Shredded Reduced Fat Sharp Cheddar Cheese
  • Fresh basil leaves
  1. Preheat oven to 400° F. Line a shallow rimmed baking pan with foil, then spray with nonstick spray
  2. Place pineapple, onion, vinegar, pepper flakes, salt, black pepper and olive oil into a mixing bowl, tossing lightly, Spread mixture evenly in the prepared pan.
  3. Cook in preheated oven for 20-30 minutes, stirring halfway through, or until pineapple and onion are lightly caramelized. Remove from oven; Place baguette toasts on pan and sprinkle evenly with shredded cheese. Return to oven until cheese is melted and bubbly; watch carefully, as it doesn't take long. Remove from oven; top each with pineapple mixture and a bit of fresh basil and serve warm.
