This recipe hails from Ireland, where potatoes and cabbage are a staple of that country’s delicious cuisine. With added cooked ham or bacon, all that’s left to add is some wonderfully rich Sargento® Shredded 4 State Cheddar® Cheese and a handful of fresh garnishes like scallions and chopped parsley.

Ingredients
  • 6 medium (1-1/2 lbs.) potatoes, peeled and cut into 1-1/2-inch cubes
  • 1 stick (1/4 lb.) butter, divided
  • 3/4 cup hot milk or cream
  • Freshly ground black pepper
  • ½ tsp. salt
  • ½ head (1 lb.) green cabbage, cored and finely shredded
  • ½ lb. diced ham or cooked bacon (optional)
  • 1-7/8 cups (7.5 oz.) Sargento® Shredded 4 State Cheddar® Cheese
  • 2 scallions, finely chopped or 1 Tbsp. finely chopped chives
  • Chopped fresh parsley
Directions
  1. Boil potatoes in salted water until tender. Drain potatoes from water and allow to dry in colander for 2-3 minutes. Mash potatoes thoroughly. Add half of butter, cut into pieces. Gradually add hot milk, stirring constantly.
  2. Season with black pepper and a little salt. (Do not overseason as the bacon will add more salt to your dish.) Boil cabbage in unsalted water until it begins to turns a darker green, about 3 minutes. Turn off heat; cover with lid for 2 minutes.
  3. Drain cabbage. Add cabbage, scallions, cheese and ham, if desired, to mashed potatoes, stirring gently.
  4. Top with remaining butter. Sprinkle with parsley and serve hot.
