Dates are so rich in sweet flavor that the best way to balance out that flavor is by challenging it with the smoky robustness of crisp bacon and a melted Sargento® Sliced Pepper Jack Cheese filling. The flavors combined are so rustic and delightful that they will be sure to steal the show at your next cocktail party.

  • 16 large dates
  • 4 slices Sargento® Sliced Pepper Jack Cheese
  • 8 slices (not thick cut) bacon, cut crosswise in half
  1. Cut a slit in side of each date; remove and discard pit. Stack cheese and cut into 6 strips. Cut strips in half crosswise. Stuff 3 to 4 cheese strips into each date; press slit together enclosing cheese.
  2. Wrap one piece of bacon around each stuffed date making sure to cover slit entirely. Place on a foil-lined baking sheet.
  3. Bake in a preheated 425°F oven 6 minutes. Turn dates over; continue baking 6 minutes or until bacon is crisp. Cool 5 minutes; transfer to serving platter.
