Beautiful colors and vibrant flavors make up this summery yet festive Provençal mix of savory vegetables made from garden-fresh ingredients. Sargento® Shredded Mozzarella - Traditional Cut makes for a great addition once the mixture is cooled, proving it to be an ideal topping or spread for a variety of dippers and toasts.

  • 2 Tbsp. vegetable oil
  • 2 cloves garlic, minced
  • 1/2 cup minced onion
  • 4 plum tomatoes, chopped
  • 1/4 cup sun-dried tomatoes in oil, drained and chopped
  • 1 Tbsp. balsamic vinegar
  • 1 cup baby arugula leaves, torn in half
  • 1/2 tsp. pepper
  • 1-1/2 cups (6 oz.) Sargento® Shredded Mozzarella - Traditional Cut
  1. Heat oil in medium skillet over medium heat; add garlic, cook 1 minute. Add onion, plum tomatoes, sun-dried tomatoes and vinegar; cook 5 minutes or until liquid evaporates. Add arugula; cook 1 minute or until wilted.
  2. Remove from heat; stir in pepper. Cool to room temperature; stir in cheese. Serve as a topping on toasted French bread, pita chips or bagel chips.
