Tangy Ham Pasta Salad
INGREDIENTS
- 1 cup (4 oz.) penne or mostaccioli pasta, cooked and drained
- 1 red or green bell pepper, chopped
- 1-1/2 cups (6 oz.) Sargento® Pepper Jack Shredded Cheese, divided
- 1 cup diced deli ham or smoked turkey
- 1/3 cup thinly sliced green onions
- 1/3 cup sliced black or pimiento-stuffed green olives (optional)
- 1/3 cup picante sauce or salsa
- 1/4 cup light mayonnaise or sour cream
- 4 large romaine or red leaf lettuce leaves
DIRECTIONS

Combine pasta, bell pepper, 1 cup cheese, ham, green onions, and olives, if desired, in large bowl.

Combine picante sauce and mayonnaise in small bowl. Add to pasta mixture; toss well. Transfer to lettuce-lined serving plates; top with remaining cheese.
