Combine garlic, anchovies, if desired, salt and pepper in small bowl. Whisk in lemon juice and mayonnaise. Slowly add oil, whisking until smooth and thickened.
Gently toss together lettuce and dressing in large bowl; add cheese. Toss gently. Top with croutons, if desired.
