Brush both sides of chicken with 2 tablespoons dressing. Preheat grill or broiler. Grill chicken 4 to 5 inches from heat source 5 minutes per side or until chicken is cooked through.
Combine salad greens, 1 cup cheese, tomato, olives and peppers in large bowl; toss with remaining 1/3 cup dressing. Arrange on four serving plates.
Slice chicken crosswise into 1/4-inch slices; place on top of salad greens. Sprinkle with remaining cheese. Sprinkle with croutons, if desired
