Caribbean Layered Cheddar Salad

Ingredients

  • 1/3 cup honey mustard dressing
  • 1 Tbsp. lime juice
  • 2 tsp. Caribbean jerk seasoning
  • 1/2 tsp. ground cumin
  • 3 cups shredded romaine lettuce or 1/2 of 10 oz. pkg. torn salad greens
  • 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Double Cheddar Cheese, divided
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 ripe mango, peeled and diced or 1-1/2 cups bottled diced mango
  • 1/2 cup diced plum tomatoes
  • 1/2 cup thinly sliced green onions
  • 1/2 cup roasted cashews or peanuts

Directions

  1. Combine dressing, lime juice, jerk seasoning and cumin in small bowl.
  2. Layer in order: lettuce, 1 cup cheese, beans, mango, tomatoes, green onions and remaining cheese in clear glass serving bowl. Drizzle with dressing and top with cashews.
