Breakfast Burritos
Ingredients
- 6 eggs
- 2 cups (8 oz.) Sargento® Bistro® Blends Shredded Taco Cheese, divided
- 2 Tbsp. butter or margarine
- 8 (6-inch or 7-inch) flour tortillas
- 1 cup chopped tomatoes
- 1/2 cup sliced black olives
- 1/2 cup chopped green onions
- Sour cream (optional)
Directions
- Combine eggs and 2 tablespoons water; stir in 1 cup cheese. Melt butter in large skillet over low heat. Add egg mixture and cook until eggs are desired consistency, stirring gently.
- Heat tortillas according to package directions. Divide egg mixture between hot tortillas; top with tomato, olives, onions and remaining cheese. Fold tortillas burrito-style. Serve with sour cream, if desired.
