Breakfast Burritos

Ingredients

  • 6 eggs
  • 2 cups (8 oz.) Sargento® Bistro® Blends Shredded Taco Cheese, divided
  • 2 Tbsp. butter or margarine
  • 8 (6-inch or 7-inch) flour tortillas
  • 1 cup chopped tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions
  • Sour cream (optional)

Directions

  1. Combine eggs and 2 tablespoons water; stir in 1 cup cheese. Melt butter in large skillet over low heat. Add egg mixture and cook until eggs are desired consistency, stirring gently.
  2. Heat tortillas according to package directions. Divide egg mixture between hot tortillas; top with tomato, olives, onions and remaining cheese. Fold tortillas burrito-style. Serve with sour cream, if desired.
