Vinaigrette Tomato Salad with Blue Cheese
INGREDIENTS
- 1 clove garlic
- 1/4 cup red wine vinegar
- 1 tsp. Dijon mustard
- 1/2 tsp. dried basil
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 3/4 cup olive oil
- 6 ripe tomatoes, cored and sliced 1/2-inch thick
- 1 cup (4 oz.) Sargento® Crumbled Blue Cheese, at room temperature

Chop garlic in food processor. Add vinegar, mustard, basil, salt and pepper. Add oil slowly in very thin stream through feed tube with machine running.

Place tomatoes on serving platter; drizzle with dressing. Top with cheese before serving.
