Place meat, salsa, oil, lime juice, tequila and garlic in plastic bag; close tightly. Shake to combine ingredients and coat meat. Add peppers and onion slices. Marinate in refrigerator 2 hours or longer.
Remove meat and vegetables from marinade; reserve marinade. Preheat grill or broiler. Grill beef and vegetables 5 minutes per side to desired doneness.
Slice beef and peppers into thin strips and separate onion slices into rings. Divide beef and vegetables among heated tortillas. Heat remaining marinade to a boil. Drizzle over beef and vegetables. Sprinkle with cheese. Roll up and serve.
