Fajitas with Grilled Vegetables

Ingredients

  • 1 lb. boneless beef top sirloin steak, 1-inch thick
  • 3/4 cup salsa
  • 2 Tbsp. olive oil
  • 2 Tbsp. lime juice
  • 2 Tbsp. tequila
  • 2 cloves garlic, minced
  • 1 large red bell pepper, cut in half
  • 1 large yellow bell pepper, cut in half
  • 4 slices red onion, cut 1/4-inch thick
  • 8 (7-inch) flour tortillas, heated
  • 1 cup (4 oz.) Sargento® Bistro® Blends Shredded Taco Cheese

Directions

  1. Place meat, salsa, oil, lime juice, tequila and garlic in plastic bag; close tightly. Shake to combine ingredients and coat meat. Add peppers and onion slices. Marinate in refrigerator 2 hours or longer.
  2. Remove meat and vegetables from marinade; reserve marinade. Preheat grill or broiler. Grill beef and vegetables 5 minutes per side to desired doneness.
  3. Slice beef and peppers into thin strips and separate onion slices into rings. Divide beef and vegetables among heated tortillas. Heat remaining marinade to a boil. Drizzle over beef and vegetables. Sprinkle with cheese. Roll up and serve.
