Combine pickled vegetables, olives, parsley and dressing in medium bowl. Add cheese; toss again. Cut bread in half horizontally. Pull out soft bread crumbs from both sides of bread leaving 1/2-inch border; reserve for another use.
Layer spinach leaves, salami and peppers on bottom half of bread. Spread cheese mixture evenly into top half of bread. Close sandwich; cut into serving pieces.
