INGREDIENTS
- 1 Tbsp. olive oil
- 1/2 cup finely chopped onion or shallots
- 3 Tbsp. all-purpose flour
- 1 can (14 oz.) chicken broth
- 1/4 cup fresh lemon juice
- 1 tsp. grated lemon rind
- 1/4 tsp. pepper
- 1 lb. orzo pasta, cooked and drained
- 1/3 cup thinly sliced fresh basil leaves
- 2 cups (8 oz.) Sargento® Chef Blends™ Shredded 6 Cheese Italian, divided
- Diced plum tomato (optional)
- Basil sprigs (optional)
DIRECTIONS

Cook onion in oil in medium saucepan over medium heat 5 minutes or until softened. Whisk in flour; cook 1 minute more, stirring constantly. Whisk in broth gradually; heat to a boil, stirring frequently. Stir in lemon juice, lemon rind and pepper.

Toss orzo with broth mixture, basil and 1-1/2 cups cheese. Top with tomatoes, remaining cheese and basil sprigs, if desired.
HELPFUL HINTS
- Make ahead and place in lightly greased 2-quart baking dish. Bake at 400° F 25 minutes.
