Moroccan Cheddar Couscous

Ingredients

  • 1 Tbsp. olive oil
  • 1 medium red bell pepper, diced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14-1/2 oz.) chicken broth
  • 1 cup couscous, uncooked
  • 1-1/2 cups (6 oz.) Sargento® Fancy Shredded Sharp Cheddar Cheese, divided
  • 2 Tbsp. chopped fresh cilantro

Directions

  1. Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed.
  2. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.
