Moroccan Cheddar Couscous
Ingredients
- 1 Tbsp. olive oil
- 1 medium red bell pepper, diced
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (14-1/2 oz.) chicken broth
- 1 cup couscous, uncooked
- 1-1/2 cups (6 oz.) Sargento® Fancy Shredded Sharp Cheddar Cheese, divided
- 2 Tbsp. chopped fresh cilantro
Directions
- Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed.
- Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.
