Acapulco Smoked Turkey, Cheese and Rice Salad
INGREDIENTS
- 2-1/2 cups cooked brown rice, chilled
- 1 lb. deli smoked turkey breast, cut into1/2-inch pieces
- 2 medium tomatoes, diced
- 1 small green bell pepper, diced
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1-1/2 cups (6 oz.) Sargento® Fancy Shredded Pizza Double Cheese®, divided
- 1/2 cup Ranch salad dressing
- 12 lettuce leaves
DIRECTIONS

Combine rice, turkey, tomatoes, bell pepper, onion and cilantro in large bowl. Add 1 cup cheese and dressing; toss.

Cover and chill at least 1 hour before serving. Line 6 plates with lettuce leaves; top with rice mixture. Sprinkle with remaining cheese.
